Popcorn Cake - A Fun and Festive Treat Empty Popcorn Cake - A Fun and Festive Treat

This is an old family recipe that I remember making with my grandmother when I was little. Amounts....well, we eye-balled all the amounts, and I still do to this day, but I'll try to come up with reasonable amounts. The extras in the "cake" are all to-taste.

Genki's family Popcorn Cake:

You will need:
3-tbsp butter or margarine
1 package minature marshmallows
approx. 6 cups popped, unflavored, unbuttered popcorn
2/3 to 1 cup spice drops (or gum drops if you don't like the spicy ones wink.gif )
1/2 cup (or more!) honey-roasted peanuts
Angel-food cake pan, buttered or sprayed well with vegetable cooking spray

Melt butter in large saucepan over low heat
Add marshmallows and stir until completely melted
Remove from heat
Add popcorn and stir until well coated. Add remaining ingredients, stir well and quickly transfer to angel-food cake pan. Press down firmly.
"Cake" will pop right out of the pan once it's cooled, and can be cut and served as a treat the kids are sure to love!
